There are plenty of of great cookbooks out there. The first book I would recommend though would be Becoming Vegan. It's written by two nutritionists and has valuable information for new mom's, babies, toddlers, and kids. It's a fantastic book filled with facts that are easy to understand. Then I would take a look at Dreena Burton's cookbooks especially Viva Le Vegan. I haven't always made excuses for my beliefs, I used to be so rigid in my values and thinking that it became a very lonely and sad place.

I've always been different...the radical feminist, vegetarian, vegan, attachment parenting parent, non-vaxer and so on. During my years I have realized that balance is key to living a healthy and happy life. My child taught me this. He isn't like every other kid out there and has some significant speech problems and sensory issues. I have to be flexible, I want to be flexible so that I can give my child what he needs when he needs it.

I think what I was trying to write about in my post are the thoughts that go on in my head and what I think goes on in the head of many vegan parents.

I would love to hear your thoughts and suggestions about how you balance it all with your kids and living a vegan lifestyle- perhaps it could help many of us out who struggle. So as far as the meat thing and the the teacher getting confused I made it a point to meet up with the teacher before the first day of school so I could tell her, and she has been very helpful, I even sent along a box of the Alternative Baking Co.'s cookies on days when people brought in there Birthday treats so my son would not go without.
As far as the vegan "meat" sandwiches, he maybe gets one a week, two if its been a hectic chaotic week, but normally its one. I tried to do the vegan lunch box thing, but I do not know how much time your son gets at lunch, but my son was missing out on eating a lot of his food because of time restraints. So what I found works a little bit better for him was taking maybe a container of leftovers from the night before, and apple, and some broccoli or other raw vegetable.

I wish you good luck!!!
